Not fine dining but a couple of current faves of mine are Pera on Leith Walk - Turkish, almost cafe-style. The Gardeners Cottage is good too. Also see the Lookout (same people/menu as GC, but with views)
Noto on Thistle street is good too if you like the small plates style
Tom Kitchen's other place Kora is getting a lot of praise, but I've not been myself
