I put acoustic batten panelling on the roof. It was £20 per 2.4m x 0.6m - not too bad as it’s very easy work and it’s a final solution with no additional finishing work. Even acts as insulation as it has a felt backing which also allows it to bend a tiny bit to take up any discrepancies. But it was in a detached garage so the fire resistant version not needed.

There is a fire rated version but it may be prohibitively expensive for a garage roof.
How about not having a sig at all?

Why does it need noggins? With joists that close would that not be enough?
And why would it then need to be plastered if keeping a car in? I was just planning to board it and paint...
Needs to be skimmed for regs so the gaps in the boards are filled in. To skim you need noggins at the ends of the boards otherwise they twist and deflect under pressure so skimming don’t work
