just make 2 patties and stick it between. Can't see why it needs to be sealed in. I prefer "mature slices" for the true filthy taste, and I just put them on the patty when I flip it. Cover with a lid and it'll drape itself nicely over the patty

I like cheese too - that's why I put it on the burger. I don't understand putting cheese inside the patty; it won't behave like the cheese on top. IF you get it right Jobbo, you bite into your burger and lovely oozy melted cheese spills out.
Give it a try - Zed's right though - needs to be well processed cheese. If you use the good stuff, it basically melts way - makes for a juicy burger but you don't get the correct ooze...

Fuck me, burger pedantry 
Cook four flattened burgers.
Two large baps. Under the oven for a bit, open 'em, add butter and cheese to tops and bottoms. Grill for a bit.
Once cheese is melting, add ketchup to taste (or not) and add a burger to each base, add another slice of cheese, grill a little longer.
Once cheese starts melting, retrieve from grill, add the other burger, add condiments, then wait a few minutes to let it all oooooze around before ramming it down your fucking throat.
