Had a nice slightly Caribbean style sweet potato and sprout curry tonight.

Maybe not quite in the spirit of the thread, but....

East and West sides of Central Scotland have always held a rivalry. The East has the Tourist-drawing Captial. The West the largest city in the country. The West known for mean streets and sharp, clipped retorts. The East for raising their tone at the end of every sentence to make all comments appear to be questions, like total bell-ends. That sort of thing.

One separator that remains is within the lucrative Chip market sector. In Glasgow you’ll be offered Salt & Vinegar. Whereas Edinburgers are instead offered Salt & Sauce. (And in Milan - Saltyo Vinegrastos, but I digress).

I’ve spent most of my life on the West side. But my dad was from Edinburgh, and my tongue vividly remembers evenings at my Grans or my Cousins when someone stated “let’s get a chippy! (Except raising their tone at the end to sound like a question of course).

So yesterday I decided to make my own. Some consultation with both ScottA and google confirmed my understanding of the recipe - including variations and arguments of course. All I had was an empty 1l bottle of cooking oil - so cleaned that out and drilled a hole in the lid.

Ingredients are simple and must be the cheapest crap available for an authentic result.

So :
50% Gold Star Brown Sauce.
25% Gold Star Malt Vinegar
20% West Of Scotland Tap Water
5% Nostalgia

Taste tested it last night (Chippy is about 5 miles away, cross-country, so a great excuse also to exercise the Evora legitimately).

Result : feckin epic. 😎

Homemade pizza's with the kids today, as I got a pizza stone for my birthday. Not perfect as made with normal flour - not been able to buy bread flour for months - but not bad either. Would really like to build a pizza oven but £ and space an issue. The stainless jobbies look shit.

The baker said I'll be pleasantly surprised by the improvement in my bread by using this flour rather than the shit they sell in supermarkets 😂😂 We'll see about that when I do another loaf.

So having finally got myself some of the Ribman hot sauces over the last couple of months - now trying his meat. New service as he’s not able to sell it at his usual “stall” (?).

Looking forward to this. I am thinking Burritos....

Already cooked in his normal BBQs. Sent next-day Fedex in insulated box with cool pack.

Just heat it up again in a pan. 😎

Like his sauces - when it becomes available on the shop it sells out in about 10mins. Best thing to do is follow him on twitter to get info on next batch availability - unfortunately his professional twitter is also his personal twitter, so you have to filter out normal crap n banter. :?

Yeah - I think that’s right. He’s not doing any of the F2F stuff now obviously, but he is cooking loads more sauces and still selling out v quickly.

Bought a kilo of meat - split off 650g for four last night. I wasn’t cooking, but tortillas, bit of rice, roasted peppers and onions, meat, drizzled with some of his Holy Fuck sauce. Was really good, but I am no food photographer.

(Two of these each. Should have heated more meat as eldest wanted to put about 300g on each of his....)

Clockwise from the top right we have:
Lamb Saag
Dahl Makhani
Mixed veg curry
Persian chicken and lentil

Plus a mushroom pilau, mint raita, and an onion salad.
There were a couple of garlic naans too, but they were still in the oven (and were shop-bought anyway)

I should add that my portion control has wandered a bit - this was supposed to be dinner for 3 for 2 nights!

Mmmmmm Curry, salivating at eight in the morning for a curry now.

Yesterday did another slow cooker bread, mixed and kneaded at 7, punched it down at 10 and set cooker to high, lovely loaf ready at 1.

Then I attempted home made mayo, coz, why not. We've an egg farm 10min walk across fields and they've a great self serve system so we load up with trays weekly for baking now.

Anyway, what a pain in the preverabial! Tried every kind of mechanical mixing device in the cupboard and nothing would get it to thicken. Finally had to whisk it for-bloody-ever by hand. It tasted ok (Lemon, Garlic and Garlic salt) but was a collosal faff.

Upside is you probably burnt off the calories you consumed, so you can eat more!

We had a pint of double cream that needed using up, so made a sausage pasta sauce. It was delicious and very, very rich. To balance that out I made Salad Nicoise the day after.

That's a serious amount of curry going on there Nef, and top side dish action!
I've never made pilau rice. Just do steamed rice all the time now I found a way to get it right every time. We also have a rice cooker but it's not as nice as you get some crispier bits on the bottom with that.

Powerfully build company director unable to whisk for more than 15min without shoulders going all a bit hurty :oops:

The only upside of homemade mayo I recon is all those leftover egg whites to be turned in meringue ;)
