Teh cheese fred

I think Roquefort remains my favourite. Can’t eat too much of it, but it kicks Stilton straight in the nuts.

Black Bomber cheddar is almost inedible in “straight” form. So spiced and flavour packed it literally makes your eyes water. As a cooking companion however - sublime. 8-)

And as per this tweet - the Red Leicestershire from the same company. Had some more tonight and it had the same impact. Just wow - if you haven’t you have to. Special stuff gromit.



Meanwhile I have discovered that a single teaspoon of The Ribman’s Holy Fuck sauce turns a mature cheddar toastie into a culinary delight. After years of being almost unobtainable he’s concentrating on online sales through covid19 so grab a bottle or two while you can. 8-)

I love a good Red Leicester. Big fan of Gorgonzola too.

What Rev said though it’s usually easy to spot because wanky hipster cheese often has something added to it, such as chilli.

Having said that, cheddar with chilli eaten with grapes is amazing.

A couple of surprisingly excellent supermarket efforts:

Asda's generic "Iberico" - accidentally discovered when I couldn't get Mancheggo. Excellent raw, but IMO melts/cooks better than Mancheggo too when stuffed in things.

Tesco's Chaource - needs to be allowed to get proper runny ripe, but a really nice mushroomy, earth alternative to your usual soft cheese options. A particularly good partner to a plummy, rich port.

Tesco Bleu D'auvergne - like somewhere between a fresher/younger stilton and a piccante gorgonzola. Scarily moreish.

ETA - Lidl's Gorgonzola Dolce. Bit mild for cheeseboards IMO, but great in salads etc, and deemed acceptable by the normally blue-cheese-hating Mrs Nef.

Cheese is one of life's great pleasures. Far too many to choose from, but blues in general rank top for me.

I generally like all cheeses, except the ones where you open them up and it smells like a 3 year olds diapers then makes your entire fridge smell like shit.
Favourite is soft Gorgonzola, the spoon it out type.
How about not having a sig at all?

Haven’t found a cheese I dislike, but there are several I can’t eat without taking a lactase tab. Love a good blue but the best I’ve had was an 5 year old aged comte, like a hard cheddar but a real taste of roast beef in the rind. Also at around £50 a kilo it’s reassuringly expensive. Always pick up a piece when we are in France, goes well with a nice cider.

Soft cheese can fuck right off. Any strong, crumbly cheddar is an instant win for me and oud Amsterdam is superb too.

Goat's cheese is always underrated but you just can't beat a decent blue. Love a bit of Oxford blue myself.

I'm a simple man, I like a strong cheddar, something blue with veins in it, and some of the crumbly white cheeses with fruit in them are nice too - apricot works well with it.

Is that sophistimicated enough? :)
