As mentioned to @dinny_g - edging the pigs in blanketos and the beef - the Coca Cola ham came through again. Boiled in (full fat) coke with cloves and peppercorns, then baked with maple syrup - comes out sweet without the saltiness that can dominate a ham experience. I shall hog (pun intended) the leftovers….

The gravy…

Base Gravy made 8 weeks ago with chicken wings and veg. Frozen and slowly defrosted today. The turkey roasting tray had the giblets plus carrots, parsnips, onions, garlic and herbs. Once the bird was out I added turkey stock and mushed it all down, strained it into the base gravy.

Final element was the resting juices from the bird and a whole jar of smooth cranberry.

It was fucking lush…

And my Gammon was world class.

Boiled in veg stock with fresh black and pink peppercorn to 60 degrees.

Then roasted in a honey and mustard, muscovado and bourbon glaze to 68!i

I do can’t ok an excellent Christmas spread

It was definitely the veggies, I spent ages on a selection of roasted veg. The protein was almost an afterthought :lol:

The sprouts, just Slightly boiled and then cooked with butter, bacon and onion, turned out perfect.

Also the yorkshires this year we’re just right too.

Overall a solid 9/10.

The cauliflower cheese was, according to my stepson, the best thing. I enjoyed the turkey; I let it rest for an hour after cooking, but what I think really worked was melting 50g of butter slightly in the microwave and liberally painting it on the bird before cooking.

Most things came out well, forgot to put the pigs in blankets on though. Never mind, I'll have them today.

We had lamb this year, as it was just two of us eating meat and I fancied it, came out nice. The missus did a mushroom Wellington though which was actually the unexpected star of the show for me this year.

The duck was fantastic. So tender the meat fell from the bones with a determined stare. But it was so juicy and moist.

Had three butterflied and marinated chickens done on the BBQ and they were delectable.

Almost too hot a day but had plenty of shade umbrellas and cold drinks.

My 20 minute christmas dinner for one done in an air fryer got 50k views and 550 likes on twatter yesterday, which was a little surprising. Was very nice though.
