Paid £185 for a Flame Boss 500 in the end as I saw a good deal. Got my smoker second hand for £165 though, so the way I justify it in my head is that I've got a good rig that if all goes well should be set and forget for £350, which isn't bad at all compared to what you could pay.
I'm quite tempted to get a wee portable barbeque now that we have a decent bit of outside space, but I feel like we're having our summer now and by the time it arrives it'll be back to pissing down

I'm not that rich! I had to think hard about spending £185 on it as something I don't really need.
TBH I still love my gas one for day to day stuff, and I don't have space for something big. The WSM is nice and compact, so this addition should just give me a bit of flexibility.

Just do it, buy a canopy and it becomes a year round thing.

Exactly - I use a pop up gazebo. I don’t slow cook though. Roast Chickens and Beef joints. Great for family gatherings as I can do 2 or 3 at a time

Hot Holding - it's what most of the Texas lot do.
Cook your brisket the day before, when cooked leave it wrapped and stick it in the oven at 60degC, hold overnight until service.
Or,
Cook your brisket the day(s) before, when cooked leave it wrapped and stick it in the fridge. 4/5 hrs before service, pop it in the oven and bring it up to serving temp.
This will improve the product a lot - it's the mother of all rests. And you'll be fresh for your guests.

Anything that makes it easier to do more outdoor, slow cooking is never going to be a bad thing to have in your life. Interested to hear how you get on with it.
Last cook the old fashioned way yesterday (the new toy arrived yesterday afternoon). Finally got the short rib nailed!
Followed this method:
I was a bit worried because 285 is a bit hotter than I normally cook, but also followed the advice about just poking them with the probe rather than looking at internal temps (as I suspect I was overdoing them before). Came out perfect, my mate who came over for lunch was raving about how good they were.
So I was delighted with that, but perhaps the bigger surprise for me was some cheap chicken legs I threw on the smoker for a couple of hours after the ribs were done, followed by a quick sear on the gas at the end. They came out amazingly moist and tasty. £1.89 for four legs from Sainsbury's, why haven't I been doing these for lunch all the time!?

Not really, I might have glanced at the probe (don't recall anything unusual) but mainly going on feel. It was quite a small cut so I tried after 4hrs and it wasn't quite there so have it another hour and it was spot on.
Found this crowd when getting my flame boss, looks like they have some interesting stuff so might try them for some of their rubs and sauces at some point:
They're situated just east of the Cairngorms so would be seriously tempting to swing by on a Scotland trip! No evidence they have a store there though.
