Tommy Sauce
Re: Tommy Sauce
If we're moving on to wider condiments, this evening the wife informed me that we have seven types of salt in the cupboard.

I'm fairly certain that's a crime against humanity, at least on a technical level.

He's using Tesco red sauce. That's out rageous.Beany wrote: Tue Apr 05, 2022 7:49 pm I'm fairly certain that's a crime against humanity, at least on a technical level.
You will see his exceptionally good cooking put him in hospital with stomach problems a couple of months ago.
Re: Tommy Sauce
I’ll eat anything with anything, some of that looks alright. Some of it looks a bit undercooked though..
Re: Tommy Sauce
One Sauce I just can't get on with - Love BBQ, hate the "Sweet Smoky Flavour" of the sauce - in fact anything that's "Barbeque Flavour"Several people wrote: Barbeque Sauce

Re: Tommy Sauce
HaHa, well possibly not on a chemical level, it was something like this:
Table salt, Lo Salt, Coarse Sea Salt, Fine Sea Salt, Kosher Salt, Pink Himalayan Salt, and some kind of Black Salt.

Trial today.
Less “sharp” than HP (less vinegar) but a fruitier tone. Brought back distant HP Fruity memories.
Interesting change. Cheers.

Kosher salt and ranch are two things that just don't land over here.

Well, as it happens, we do. It's just coarse rock salt. Using the word Kosher just seems to be a hangover.

Re: Tommy Sauce
I went condiment shopping yesterday - mainly a quest for HP Fruity. Not much of a quest though as Tesco sell it - it's clearly just not something as popular amongst Waitrose shoppers.
However, I also noticed they had some Kuhne German Mustard on clearance, so bagged a jar of that as well. I love German mustard (well I love all mustards really) but haven't seen any for some time. It's like American mustard but proper.

Thanks @Sundayjumper and @Gavster for the Maggi and Mr Naga recommendations. Got bottles of both and they’re great. The masala chilli sauce is particularly good on fish and chips.Sundayjumper wrote: Mon Apr 04, 2022 8:36 pmCorrect again. Thanks to @Gavster for introducing me to this stuff, you can use it anywhere you might otherwise use ketchup. It's great.

Mr Naga I was expecting to blow my head off. Yes it’s hot so you don’t need much but it’s got a great flavour. I haven’t cooked with it yet, just used it as a condiment.
Re: Tommy Sauce
I also picked up a bottle of this following the recommendation - it is indeed very nice.Jobbo wrote: Fri May 06, 2022 6:23 am

Re: Tommy Sauce
Give the Tamarind a go as well. Different flavour, but it works on a lot of things.

The only thing I've noticed is that I need to use quite a lot to get the intensity I want. This bottle won't last long !

Re: Tommy Sauce
Can also heartily recommend Lee Kum Kee's Chiu Chow Chilli Oil and Patak's Chilli Pickle. The former is very savoury and has a great kick. You can just drizzle the oil itself or scrape the jar for some chunky chilli bits as well. The latter is awesome and addictive - plenty of heat and pickle, as you'd expect, but it's really strong on the turmeric and fenugreek as well.
