Kinda like ASMR for knife people, how to spend a day to turning a 100Yen shop (poundland) cheapy into a razor. With some expensive whetstones and a lot of skill/patience/leftover fingers.

Looked at those and seem a great way of getting the angle correct but as a pen pusher I need to take these steps every now and then to remind the pack that I can :D

I sharpened my 3 good knives yesterday (plus one of our crap ones - to get my eye in)

- whetstone
- ceramic hone
- strop

They are now ASAF.

That is all.

I have both whetstones and also, one of those roller stones and tend to use both for various uses...

The roller is fine for a quick sharpen but there are 2 issues:

1. It can be difficult to retain the correct angle on the top for a longer blade flexible blade (Filleting knife or carving knife)
2. Depending on the design of the handle and bolster, it's not always possible to sharpen the edge right by the handle

That's a useful reminder I need to go through all of my knives and do the same, they've not been sharpened in ages. One of them had trouble cutting through the skin of a grapefruit the other day which is particularly troubling :lol:

That was what turned me onto them in the first place tbh. I’m also a sucker for a hand forged blade though.

I did 3 of ours the other day as well - using my dual whetstone. All shitty cheap knives, the best one being a 25yr old Kitchen Devil one bought as student :lol: . Took an hour as they were all very blunt.

They're all now ASAF and I have a new love for the old Kitchen Devil. Need to do the rest now, including another larger Kitchen Devil of a similar age, and a couple of Ikea specials.

Those kitchen devil knives were good for the price. I’ve got a santuko that was my go to knife for years. The blade is cracked now and I can’t seem to find them anywhere to replace it :(.

Yeah, real chefs rarely have expensive knives for work. You want something you can just chuck in the dishwasher.

High end knives are just another thing for middle aged dudes to spend their money on :lol:

That has some appeal.

Given the price though, I'd almost certainly be lured by something like THIS instead though.
