I missed out on my Christmas Day drive as I kept sipping on wine from 10am :(

A turkey cooked for 2.5 hours and rested for a further 2.5.
Made from scratch gravy, first time ever and it was gorgeous.
Roast potatoes.
Carrots.
Stuffing.
Sausage meat balls.
Pigs in blankets.

Really enjoyed it and lots of moist turkey left for Boxing Day and ham, turkey and leek pies.

I made gravy about a month ago, especially for today. Then made more gravy today from the trivet of veg and giblets and a chicken stock (also home made). Combine the two with today’s resting juice and about 5 or 6 teaspoons of smooth cranberry.

Lots of effort overall for a bit of gravy but fuck me it was good...

Yes we managed to eat only 1/3 of what we had despite gorging on smoked salmon, mackerel, crab, prawns and taramasalata... fortunately our 5 year old loves seafood!

Ended up with a rolled turkey breast for dinner rather than a full bird - was great actually as easier to cook just so without having the white meat overdone and they included lots of brown meat underneath. Went down well with port gravy made with turkey giblets the butcher gave us FOC.. and a nice Brunello to wash it down!

I was running around like an idiot yesterday after having a quick post work nap at 1pm that lasted till knocking on 7pm :o

Ran to Asdas, got some pork, but because I was faffing, completely forgot to get anything else.

So today, pork in oven, do the crackling for half an hour, drop temp, then run around the local petrol stations and get some gravy and frozen toasties.

Good job I don't care about Christmas really.

Smelling good right now, looking forward to eating it all my self :twisted:

We had a minor emergency as me and mum were doing the usual Christmas trimmings, and got to not far from serving when the missus came in and we remembered we were supposed to cook her vegan nutroast (we usually make it ourselves, but went shop bought because baby). :x

Luckily, managed to get everything to come together at the last minute and it was good. My mum is a Christmas pudding and Christmas cake master, so had both those with some ice cream for afters which was a highlight.

I have had about a kilo and a half of pork, and I am happy. Time to wash it down with terrible red wine because I didn't think to buy any of that last night either. Well, not for today anyway ;)

Pork came out alright, crackling was a bit rough but I didn't score it well enough so that's my own fucking fault. :lol:

One thing I always forget is how much fat there is on a goose. Cut out the easily accessible stuff (about 500g) from the back and then drained a further two litres from the roasting tray along the way as it rendered out.

Used some of it for the roasties, now waiting for it to solidify so I can bin it.

Initially had the oven up too high (too many things going on at once), but luckily my trusty meat thermometer alerted me to the fact that the temperature was rising quicker than anticipated, so I turned it down. After cooking it rested under cover for just over 90 mins. Moist perfectly cooked meat, nothing dry or undercooked. Can't complain about that.

Fair. There's only so much goose fat one can use I suppose.

I am currently having a meat coma with a bottle of red and watching some toot on Youtube. Happy with that.

I am a simple man, I eat lots of meat, I want to snooze.

Yeh tricky isn’t it. I had a go with goose for a couple of years but got tired of the waterfall of liquefied fat that had to be dealt with. The meat is obviously also quite full on in flavour compared to turkey - I like it but my enthusiasm isn’t shared by certain others...

Fried bread: Spread goose fat generously on pieces of bread and put them into a hot frying pan for an even coating and golden colour. Alternatively heat the fat in the pan and add the bread.

That sounds amazing. Think I’ve gained weight just reading that sentence though 😂

Similar here. I love Goose, as does my Dad. Other Crimbo guests are less enthusiastic. We always do Turkey to please everyone. Glad I did beef this year but I may buy a cheap turkey in the next day or two.

My mother did the cooking for 4 of us. Turkey which was supposed to feed 8 so we barely touched it. Nice enough, it's the only day of the year I eat it.

Well, I was going to go around to my brothers place and get him some cooking things and whatnot, but he bottled it, much like I bottled having him around yesterday to help me tidy up/clear out my shithole of a house :lol: so instead I had chicken crown thing, half a kilo of frozen roasties, and I'm now supping on a bottle of Chateauneuf-du-pape.

I'll start taking responsibility for my life in teh week (and have agreed to having my bro round on the 31st as I probably won't be working much then)

Next years task - find employment from somewhere that understands what time off, and 'cover' are so that I can actually have, you know, time off. Imagine!
