I did a bit of reading as I was curious and apparently the difference is that GMT is a time zone and UTC is a time standard. Functionally they're the same and GMT is generally accepted as a synonym for UTC.

I did some as well and it just didn't make any proper sense. GMT is both a time zone and also immovable, so technically does the same job as UTC. I was going to blame the French at first as I assumed it was the usual when it comes to measurements of anything in that they'd want it to be non-English. But there's nothing in that. Can we blame the Americans who didn't want to refer to Green Witch Mean Time as that's some weird British thing, so let's call it UTC instead. Which GMT happens to coincide with.
