Aye, I only do 6 oz cause I’m pretty good at telling that weight by eye.

Smashed thin with cheese in the middle is the best burger imo

this - it's why I always try to make my own -15% Fat mince, some chopped up Smoked Back Bacon Fat, Salt, Pepper, and a squirt of Mustard.

any tips for sealing around the edges - Mine have a tendency to split. doesn't impact the cook but you do lose some of the cheese. I try to rough up the edges a little on the top and bottom patty piece but it doesn't always work

Why do you put cheese inside the burger?

just make 2 patties and stick it between. Can't see why it needs to be sealed in. I prefer "mature slices" for the true filthy taste, and I just put them on the patty when I flip it. Cover with a lid and it'll drape itself nicely over the patty

Yep. I like my burgers simple. Zero interest in these towering things you see at a lot of places, with 10 types of meat on etc.

Just give a few different things a try, such as cooking indirectly first then finishing on direct heat or turning the edges over the coal.

I like cheese too - that's why I put it on the burger. I don't understand putting cheese inside the patty; it won't behave like the cheese on top. Like with a stuffed crust pizza, by adding shit inside it you're just detracting from the things that made it great in the first place

I quite like a burger with cheese in the middle. It needs to be the right cheese though, something quite processed and American works well.

Used to love a chippy cheese n burger when I was out on the lash

IF you get it right Jobbo, you bite into your burger and lovely oozy melted cheese spills out.

Give it a try - Zed's right though - needs to be well processed cheese. If you use the good stuff, it basically melts way - makes for a juicy burger but you don't get the correct ooze...

I'm not even going to try it - I want my burger to be meaty, not made of oozing cheese

No - I might deep fry some cheese and add it to a normal patty like this, but I've got no interest in fucking up a burger.

Fuck me, burger pedantry

Cook four flattened burgers.

Two large baps. Under the oven for a bit, open 'em, add butter and cheese to tops and bottoms. Grill for a bit.

Once cheese is melting, add ketchup to taste (or not) and add a burger to each base, add another slice of cheese, grill a little longer.

Once cheese starts melting, retrieve from grill, add the other burger, add condiments, then wait a few minutes to let it all oooooze around before ramming it down your fucking throat.
