Like anything else, some crap shizzle is available. But good square sausage is the best sausage. FACT.

Conscious that this is alien to many of the UK populations…..

Despite the plethora of options, there wasn’t one that fits me. I rather like it, more than meh; but it’s not the pinnacle of sausages.

Stornaway black pudding on the other hand… that is fucking lovely.

Full Scottish > full English. Love me a tattie scone.

A square sausage should be fine on paper, but I've tried it a couple of times and found it somewhere between meh and unpleasant.

Full Irish > Full English > Full Scottish

I'm sure I've already explained this on the forum, so I'm not sure why we're still discussing it.

Most square sausage is gristley and just unpleasant, tastes of additives or something but I agree a nice one from a decent butcher is grand.

Having said that, when eating junk second breakfasts as a removal man, it was always link and hard egg!

Is it a beef sausage traditionally ?

I like Heck Pork Slice and Aldi's Macdonald's rip off but the frozen Lorne Sausage from Morrison's was quite gristley !

Usually a mix of pork & beef as I understand it.

As per opening post - you do get awful skware sossij (and awful black pudding, and awful haggis), but the good stuff is very good (see also black pudding & haggis).

I have indeed tried Lorne Sossidge. In its natural habitat, in a cafe on the side of Loch Earn. T'was good.

Never had it, but I'll eat anything at least once.

I mean it can't be worse than tripe can it, and one the two occasions I've eaten that I've liked it 50% of the time (was a thin anduillette that had been grilled on a BBQ and then sliced and grilled again on the cut faces - I just thought it was sausage at first. It was lurrrrvely)

I don't think you could have possibly eaten andouillette and enjoyed it! That's meant to be the sausage that smells like manure isn't it? The French equivalent of Surstromming.

It smells bovinous! This was in Chartres at a fairly modern restaurant by French standards. I'd say diameter was probably only an inch. It was only when I saw the folds inside that I realised and then the Mrs started calling me think for not twigging what it was from the menu

It was NOTHING LIKE the bit fat slippery grey grimness that they tend to serve in establishments in Lyon. It didn't look as bad as this either:



The char helped hugely and it was nicely spiced/seasoned/flavoured.

The tripe I accicentally ordered once in Spain tasted like it had spent a lifetime passing shit It was a crap (haha) translation on the menu. When I checked the menu to see if I'd got what I ordered, I looked at the German and French translations and it was immediately obvious what it was

I still ate 3 pieces of it though, for some reason.

Cantonese style tripe is good. It's thoroughly boiled and then cooked with chili and ginger so the point of the tripe is for the "clicky" texture or "mouth feel" (kou gan) rather than taste. Mu-er mushrooms are eaten for a similar reason in more mainland Chinese cookery.

We shouldn't be eating anything that needs to be boiled in strong alkalis to be edible
