I wouldn't want "Staff" - Cleaners, Chef's, Gardeners etc come in, do their job and then go.

Also, if you buy an existing house you will accept there are compromises. If you build it yourself and find a compromise when living in it, it'll niggle more because you could have avoided it.
Plus building a house is going to take a while.

I don't much like an indoor pool - the atmosphere gets rather humid and there's a lot of pleasure to be had from being in an outdoor pool on a sunny day.
