Performance feels good at legal speeds, which is clearly what it was built for. Over that it suffers from the tall gearing (the rear diff is 2.73) and the power tailing off over 4000rpm. I did an impromptu burnout at the lights earlier; me and my youngest had gone for a cruise with the t-tops off, I just mashed the pedal and it lit the tyres up at about 2000rpm

I think a good engine service will probably do absolute wonders. Also, and you'll laugh, but I'd check the base timing (presume it's a dizzy) as it sounds very lazy.

I plan on doing that when I reset the injection system. It idles a bit high at the moment.

Don’t know exactly, the rev counter is permanently stuck on 7000rpm but the lurch into gear suggests it could do with being a bit lower.

Is the plan to get it working properly first then modify, or are you just going to dive straight in and get frustrated and sell it?
Looks really good, nothing beats open top motoring with a V8
