I don’t need a Nakiri - I have a very nice Santoku. But since you posted that above I’ve found myself cruising various site for a Nakuri in between meetings. You nob.

I seriously need to replace my Globals knives, I started collecting them about 25 years ago when they were cool without any consideration towards whether I actually liked the feel of them. Which I don't

Need to get my hands on some Wusthofs or similar and see how they feel in my hand and their balance.

Funnily enough, I've gone in the opposite direction. I used to love my Henkles and the two globals I acquired rarely got a look in. Now my 8" Global is roughly 50/50 with my Mac for everyday use, and the 6" Global utility is my go-to veg knife.
Used to dislike the balance and lightness of the Globals, but it kinda grew on me.
Wusdorfs/Henkles kinda feel like wielding a baseball bat by comparison (meaty, handle-heavy feel), which can be a good or bad thing.

I've got a pair of Global knives (20cm and a 15cm that in combination with my Raadvad Sensei are my everyday good knives. The Raadvad being my favourite.

I level a set of 7 Globals at my old house.. I hate to think how dull they are now!

To be fair, I've barely touched a Wusthof/Henckels etc so would be prudent to buy a medium chefs knife from one brand simply as a long term trial.

I think the third one from the right is the same as my bigger chef's one.
How is the ceramic steel? I've got a Victorianox steel and a no-name german diamond hone at the moment, and I swear neither is as good as one's I've had before - I seem to be doing the proper sharpen a bit more frequently (but I might just be getting fussier in my old age!)

That was the first one I got, and is still my go-to knife for most tasks. As for the ceramic steel I don’t have any others to compare it to, however always felt it is gentle at honing the blade.
ETA: Now that I’m lodger-less for the first time in a few years they could all do with a good sharpen and hone, being safe in the knowledge they’ll be looked after too.

If you don’t have the time / equipment to do it yourself, there are several postal sharpening services available - about £10 per knife.

That’s a great shout, I’m never 100% happy with my own sharpening skills so giving them all a professional reset is a brilliant idea

About a year ago, I bought a set of silicone carbide sanding belts for my belt sander - all the way down to 1500 grit IIRC.
Knives still need a final finish on the whetstone, but it's taken the process down from over 3 hours to under an hour for my full set.
