The Beefy Boys do a proper bbq evening at their original Hereford restaurant a few nights each month. They were ranked 15th in the world outside the US recently. I have been meaning to visit. Must get round to it.
Underseasoned, the podcast that put that list out is run by two Aussies, Jay runs Meatstock in Aus. I'm almost certain they've never eaten at most of those places on the list
Saying that, Ashley who is the pitmaster at Beefy Boys, is a lovely chap who knows what he's doing

Really really good. The kids had all they could eat for £15 and £10 as Connor is still under 10.
Adults one was £42.50p each and both of us were completely full when we left. Apart from the ribs everything was just very nicely done cuts of meat and we didn't wait more than a few minutes. The only bit we didn't manage to get was the gammon but purely as we had filled up on steak and chicken.

A person comes around with meat on a stick, carves or drops it on your plate and you spin a disc on your table when you are done. I was full, the wife was full, both kids full, a rare occurrence.
No idea on the Vegetarian set up as I didn't spend much time at the buffet. I'm not really sure what was offered.

Brazilian steak houses or churrascaria - they all do this with the green/red drinks mat. Lots of Caipirinha too

Picked up an offset smoker for free off a local Facebook group. Emptied the camping trailer to collect it on Saturday and now we have a pork shoulder in. Though I didn’t start it until 2pm so it may not be done until the hours! Will be good later in the week though, I hope.
It seems to be working well, given it’s only one from Aldi. No major leaks - most of the smoke is exiting via the chimney. Fairly even temps left and right (a little difference as expected) and within the desired range, 250-275F give or take.

I didn't have to do much, just top it up now and again, but it used a lot of charcoal! Maybe it was the supermarket stuff I grabbed at the last minute that wasn't so great. Given the volume of charcoal used the layer of ash built up substaintially, which probably didn't help the fire and also meant it kept dropping ash out of the side where I had the vent open, onto my patio. Next time I'll lay a sheet of foil down there to catch it.

By 10:15pm (8 hours in) after a long stall it was only at 78 degrees C internal so I put it in the oven inside on 140 degrees C until it reached 95 degrees C internal, an hour later.

Looks fantastic - did you wrap?
I always wrap as soon as the bark is set, (double foil with a patch where the cut end of the shoulder blade will poke out) as I wanted to save as much juice as possible. It also means you can ramp up the temp to finish faster
And yes, the ash can choke the fire, needs a good poke now and then - hopefully the ash doesn't end up over the food!
If you get on with it, I can highly recommend the Hark Texas Pro Pit - we ran 8 of them for smoke school.

I didn't wrap it in this case, I was curious how crisp the bark would get. I didn't spray it with anything either as I was conscious of time and not wanting to prolong it further. Was worried it might dry out but it doesn't look or taste like that's the case.
Thanks for the recommendation. Not a cheap bit of kit but looks awesome.
