It's fair to say I've not been a fan of pizza in the past but the other half's son has a job in a local pizza restaurant and he's recently been involved in the development side for the new menu. Some of the stuff he brings home has been incredible! Up to last night my favourite was a bianca, none of the traditional pizza red base sauce, like a garlic bread to look at but totally different taste. Last night was something special, smoked cheese base, smoked ham and bacon and fried eggs! The weird thing was, he walks home from town with them after his shift so they are cold, no issue there lots of people like cold pizza but the fried eggs were still runny!

Toppings are peripheral to me but the real key to a good pizza is dough. There is a place near me that does this incredible sourdough base: not too thick, not too thin, not too crunchy, just the right amount of chewy.

Yeah a decent base makes all the difference.
My favourite place in Glasgow does Roman style pizza, which is cooked in big trays and cut into squares. The base is like focaccia, it's delicious.

Best pizza I’ve ever had was at our local out of town shopping centre that set up a few places in containers, they took the containers away unfortunately. Was dirt cheap, cooked whilst you waited in a propper stone pizza oven with the most light, thin and crispy hand made base. I miss that place

We have a couple of much vaunted places in Altrincham, that are in the supposedly "world's best pizza" type guide books etc. However, they're not a patch on one of the takeaways that's run by a bunch of young Neopolitan guys, and which is always chock full of Italian customers whenever I go. They do some corkers, and their dough is superb.
I find much of the "artisan" pizza in the UK focusses too much on the dough, with a great big ridge of crust, and you're left with only a small middle area for toppings. It's best of both worlds though at this local takeaway - great dough (with enough crust left over for dipping into their basil mayo) and decent sized area for toppings.

I like to put pulled brisket on mine, then a bit of pico de gallo, then a bit of mozzarella, 1 minute in the Ooni and away we go.

I always have home made dough in the freezer - it's dead easy to make and makes the best Pizza.
For toppings I like smoked Ham, Pepperoni and Jalapenos with fresh Basil and Oregano.
I will be building a Brick Pizza Oven in our new house when we move in

If you’re ever up this way, Baked Al’Taglio on Duke Street is where you want to go. A nice thin pizza with lovely dough is a thing of wonder and a world away from the sort of things you get from the usual takeaway places.
One of the local Italian restaurants setup a delivery service during lockdown and their pizzas were absolutely incredible. Real shame when they stopped delivering.
