The VG-10 core on the Gyuto is apparently still stainless, but a high carbon variant for hardness. Clad with a more durable grade of stainless. My youngest was very excited when he saw this and asked if he could make dinner. So he got to do an onion and some potatoes with it - I only got to play cutting ridiculously thin slices of garlic. My existing Santoku felt a little dull in a back-to-back, even though it will still shave the hair off my arm.... might sort that at the weekend with the fine whetstone and a strop....

I’m in the market for a 3” paring knife and a smaller 5” / 5 1/2” Chefs knife to accompany the 9” Chefs knife I have.
I was just going to opt for a similar Zwilling - but I may go Japanese. Christmas is coming and all...

Which I did tonight.
10-15 mins with the stone, then a strop.
I really need to work on my stone technique though. I use my thumbs as my guides to get the angle right. Last time I remembered to put some plasters on first. This time I didn’t.... “what’s that red stuff on the whetstone?.... ah”
Back to shit-that’s-sharp again.
And two sore thumbs.

And now i want some whetstones to sharpen our knives with - we have some richardson midori damascus steel ones that are getting a bit dull and need a rescue!

I just have a cheap 1000/4000 combo stone. Seems to do the job though. Other than removing my thumb-skin, it’s quite a therapeutic and satisfying process too.
I guess people spending 8x as much on a knife might feel the need to spend £alot on more serious whetstones and other shizzle.

I'd be terrified to try that on a decent knife. Unless the belt is insanely fine grit it would be pretty easy to take too much off the edge - I can see how if you nail the technique though it would be super handy. I'd certainly be practicing on some older cheap shit knives.
