Most cars will have a fuel cut inertia switch, on some it's physically reset by pressing a button, on others it has to be done through diagnostics.
No idea whether stupidly fast and stiff supercars still have them, whether it might have been removed as part of the modifications, or if it didn't have one. Definitely unusual for something to just drive off after an impact like that, ignoring the wheels pointing in several different directions

He was definitely a lucky f'cker that the van he hit had room to take off. Things would have been a lot messier if he'd come to an abrupt halt. The vid above popped up randomly on yt, which lead to this one;
