And my Gammon was world class.

Boiled in veg stock with fresh black and pink peppercorn to 60 degrees.

Then roasted in a honey and mustard, muscovado and bourbon glaze to 68!i

I do can’t ok an excellent Christmas spread

The gravy… Base Gravy made 8 weeks ago with chicken wings and veg. Frozen and slowly defrosted today. The turkey roasting tray had the giblets plus carrots, parsnips, onions, garlic and herbs. Once the bird was out I added turkey stock and mushed it all down, strained it into the base gravy. Final e...

I Literally just sat down after a long day in the kitchen.

6 or 8 hours prepping yesterday and started at 07:30 this morning with the Gammon

I’m exhausted but it was a brilliant spread ( Even if I say so myself)
