My spec was obviously the kitchen sink of everything I'd possibly want so obviously not realistic!! I'd ditch things like the Burmester if I were actually buying one but still think it would come out c.110k!

Ooh - very interesting! I would definitely have air but it sounds like you'll be going for that by default to get the 4WS. Haven't come across Brix. If you want something that is an experience I would try either Rules (second oldest restaurant in the country) or J Sheekey if fish is on the cards (they also do a set menu for £39 Sunday to Friday). Wiltons also good (oldest) but $$$$$.
